     Îìûëåíèå. Ïðè âçàèìîäåéñòâèè ñ ùåëî÷àìè æèðû  ãèäðîëèçóþòñÿ ñ îáðàçîâàíèåì ñîëåé âûñîêîìîëåêóëÿðíûõ êèñëîò, íàçûâàåìûõ «ìûëàìè».

     Îìûëåíèå êîíòðîëèðóåòñÿ ïî ×Î.

Ðåàêöèè àöèëüíîé ìèãðàöèè.

     Ïåðåýòåðèôèêàöèÿ. Ãëèöåðèäû â ïðèñóòñòâèè êàòàëèçàòîðîâ (ìåòèëàò è ýòèëàò íàòðèÿ, íàòðèé, êàëèé, åäêèé íàòð) ñïîñîáíû îáìåíèâàòüñÿ (âíóòðè- è ìåæìîëåêóëÿðíî) àöèëàìè:

     Ïåðåýòåðèôèêàöèÿ ïðèâîäèò ê èçìåíåíèþ ñâîéñòâ æèðîâ è ìàñåë è èñïîëüçóåòñÿ äëÿ öåëåíàïðàâëåííîãî óëó÷øåíèÿ áèîëîãè÷åñêèõ è ðåîëîãè÷åñêèõ ñâîéñòâ æèðîâ (ïëàñòè÷íîñòü, âÿçêîñòü è ò. ä.) Íàèáîëåå ïåðñïåêòèâíûì â íàñòîÿùåå âðåìÿ ÿâëÿåòñÿ ôåðìåíòàòèâíîå íàïðàâëåíèå.[     ]

     Àëêîãîëèç. Ãëèöåðèäû ïðè íàãðåâàíèè ñî ñïèðòàìè îáðàçóþò ñîîòâåòñòâóþùèå ýôèðû æèðíûõ êèñëîò ñ âûñâîáîæäåíèåì ãëèöåðèíà.

     Êàòàëèçàòîðû - åäêèé íàòð, àëêîãîëÿòû ùåëî÷íûõ ìåòàëëîâ, õëîðèä âîäîðîäà.

Àëêîãîëèç ïðèìåíÿåòñÿ äëÿ ïðîìûøëåííîãî ïîëó÷åíèÿ ñëîæíûõ ýôèðîâ æèðíûõ êèñëîò, ìîíî- è äèãëèöåðèäîâ.[   ]

     Àöèäîëèç. Ïðè íàãðåâàíèè òðèãëèöåðèäîâ ñî ñâîáîäíûìè æèðíûìè êèñëîòàìè äî 250-300°Ñ ïðîèñõîäèò îáìåí àöèëîâ:

     Ðåàêöèÿ ïðîòåêàåò â ïðèñóòñòâèè ñåðíîé êèñëîòû, âîäû èëè òðèôòîðèäà áîðà.

     Àëêîãîëèç è àöèäîëèç ìîæíî ðàññìàòðèâàòü êàê ÷àñòíûå ñëó÷àè ïåðåýòåðèôèêàöèè.[   ]

     Ðàññìîòðåííûå ðåàêöèè ÿâëÿëèñü ïðèìåðîì ïðåâðàùåíèé, ñâÿçàííûõ ñ íàëè÷èåì ñëîæíîýôèðíûõ ãðóïï. Íå ìåíüøåå çíà÷åíèå èìåþò ðåàêöèè, ñâÿçàííûå ñ óãëåâîäîðîäíûìè ðàäèêàëàìè.

Ãèäðîãåíèçàöèÿ ãëèöåðèäîâ. Áîëüøîå çíà÷åíèå èìååò ñïîñîáíîñòü æèðîâ ïðèñîåäèíÿòü âîäîðîä è ãàëîãåíû ïî äâîéíûì ñâÿçÿì íåïðåäåëüíûõ êèñëîò. Áëàãîäàðÿ ýòîìó ñâîéñòâó ñòàëî âîçìîæíûì ïîëó÷åíèå òâåðäûõ æèðîâ, íåîáõîäèìûõ äëÿ òåõíè÷åñêîãî èñïîëüçîâàíèÿ è ïèùåâîé ïðîìûøëåííîñòè, èç áîëåå äåøåâûõ æèäêèõ æèðîâ. Ýòî ïðåâðàùåíèå îñóùåñòâëÿåòñÿ ïóòåì êàòàëèòè÷åñêîãî ãèäðèðîâàíèÿ äâîéíûõ ñâÿçåé êèñëîò æèäêèõ æèðîâ, ïðè ýòîì æèäêèå íåíàñûùåííûå æèðû ïåðåõîäÿò â òâåðäûå íàñûùåííûå, ïîýòîìó ïðîöåññ åùå íàçûâàþò îòâåðæäåíèåì æèðîâ.  Ãèäðèðîâàíèå æèðîâ ìîëåêóëÿðíûì âîäîðîäîì ïðîâîäÿò â ïðîìûøëåííîñòè ïðè òåìïåðàòóðå 180-240°Ñ â ïðèñóòñòâèè íèêåëåâûõ è ìåäíî-íèêåëåâûõ êàòàëèçàòîðîâ, ïðè íåáîëüøîì äàâëåíèè. Ïîäáèðàÿ ñîîòâåòñòâóþùèå óñëîâèÿ, óäàåòñÿ îñóùåñòâèòü ýòîò ïðîöåññ ñåëåêòèâíî:

      êà÷åñòâå  ñûðüÿ ïðèìåíÿþò æèð ìîðñêèõ ìëåêîïèòàþùèõ è ðàñòèòåëüíûå ìàñëà - ïîäñîëíå÷íîå, õëîïêîâîå è äð. Ïðîäóêòû ãèäðèðîâàíèÿ èçâåñòíû ïîä ðàçëè÷íûìè íàçâàíèÿìè- ñàëîëèí, ñàëîìàñ è äð.

      Ãèäðîãåíèçàöèåé íåêîòîðûõ ðàñïðîñòðàíåííûõ ðàñòèòåëüíûõ ìàñåë (ìàñëî çåìëÿíîãî îðåõà, õëîïêîâîå, ñîåâîå) â ïèùåâîé ïðîìûøëåííîñòè ïîëó÷àþò æèðû. Òàê ñàëîìàñ èñïîëüçóþò â ïðîèçâîäñòâå ìàðãàðèíà, âûñîêîäèñïåðñíîãî ïðîäóêòà, ïðåäñòàâëÿþùåãî ñîáîé ýìóëüñèþ ãèäðîãåíèçèðîâàííîãî ðàñòèòåëüíîãî æèðà â ìîëîêå.[   ]

Îêèñëåíèå æèðîâ. Æèðû è ìàñëà îêèñëÿþòñÿ êèñëîðîäîì âîçäóõà. Íà÷àëüíûìè ïðîäóêòàìè îêèñëåíèÿ ÿâëÿþòñÿ ïåðåêèñè è ãèäðîïåðåêèñè, â ðåçóëüòàòå ïðåâðàùåíèÿ êîòîðûõ îáðàçóþòñÿ âòîðè÷íûå ïðîäóêòû îêèñëåíèÿ: ñïèðòû, àëüäåãèäû, êåòîíû, êèñëîòû ñ óãëåðîäíîé öåïî÷êîé ðàçëè÷íîé äëèíû, à òàêæå èõ ïðîèçâîäíûå. Ñ óâåëè÷åíèåì íåïðåäåëüíîñòè æèðíûõ êèñëîò, âõîäÿùèõ â ñîñòàâ ãëèöåðèäîâ, ñêîðîñòü èõ îêèñëåíèÿ âîçðàñòàåò. Íà ïðîöåññ òàêæå îêàçûâàåò âëèÿíèå ïðèñóòñòâèå âëàãè, òåìïåðàòóðà, ñâåò, èíòåíñèâíîñòü êîíòàêòà è íàëè÷èå àíòèîêèñëèòåëåé. Ñðåäè ïîñëåäíèõ íàèáîëüøåå çíà÷åíèå èìåþò îêèñëèòåëè ôåíîëüíîé ïðèðîäû: áóòèëîêñèòîëóîë, áóòèëîêñèàíóçîë, ïðîïèëãàëëàòû. Èç ïðèðîäíûõ àíòèîêèñëèòåëåé íàèáîëåå àêòèâíûìè ÿâëÿþòñÿ òîêîôåðîëû. [      ]

  Ïîëèìåðèçàöèÿ ìàñåë. Î÷åíü âàæíûìè ÿâëÿþòñÿ ðåàêöèè àâòîîêèñëåíèÿ è ïîëèìåðèçàöèè ìàñåë. Ïî ýòîìó ïðèçíàêó ðàñòèòåëüíûå ìàñëà äåëÿòñÿ íà òðè êàòåãîðèè: âûñûõàþùèå, ïîëóâûñûõàþùèå è íåâûñûõàþùèå.

     Âûñûõàþùèå ìàñëà â òîíêîì ñëîå îáëàäàþò ñïîñîáíîñòüþ îáðàçîâûâàòü íà âîçäóõå ýëàñòè÷íûå, áëåñòÿùèå, ãèáêèå è ïðî÷íûå ïëåíêè, íåðàñòâîðèìûå â îðãàíè÷åñêèõ ðàñòâîðèòåëÿõ, óñòîé÷èâûå ê âíåøíèì âîçäåéñòâèÿì. Íà ýòîì îñíîâàíî èñïîëüçîâàíèå ýòèõ ìàñåë äëÿ ïðèãîòîâëåíèÿ äëÿ ïðèãîòîâëåíèÿ îëèô, èç êîòîðûõ â ñâîþ î÷åðåäü ïîëó÷àþò ìàñëÿíûå êðàñêè è ëàêîâ.
